The One Pan Method: Less Dishes, Better Food

One pan meals are the best thing that happened to weeknight cooking.

The concept is simple. Put protein and vegetables on a sheet pan. Season everything. Roast at 400 degrees. Done.

The magic is in the timing. Hard vegetables like potatoes go in first. Quick cooking vegetables like broccoli go in later. Chicken thighs go in at the same time as potatoes. Fish goes in last.

The results are better than separate cooking because everything cooks in its own juices. The chicken juices season the vegetables. The vegetable juices keep the chicken moist.

Cleanup is one pan. That is the real win.

Try this tonight. Chicken thighs, baby potatoes, and broccoli. Olive oil, salt, pepper, garlic powder, paprika. 400 degrees. Potatoes and chicken for 30 minutes. Add broccoli for the last 15. Dinner is ready and you have one dish to wash.
